Asparagus à la flamande
Ingredients
- 10 whole white asparagus
- 3 eggs
- 50g butter
- 2 tablespoons of chopped parsley
- pepper
- salt
- nutmeg

Preparation
Cook the still frozen asparagus during 10 minutes or steam them during 3 minutes at 120°C in the steam oven. Meanwhile prepare 3 hardboiled eggs (+/- 9 to 10 min. cooking time) and let the butter melt. For this recipe we use clarified butter. Beat the egg white and yolk separately and mix everything together with the clarified butter and a tablespoon of water. The water ensures that you get a thick butter sauce. Season with pepper, salt and a little nutmeg. Add the chopped parsley (frozen). Serve the asparagus with the eggs on top.Tip: if you wish to serve this as an appetizer, cut the frozen asparagus diagonally into 2-cm-pieces. Leave them to cook and finish according to the basic recipe.
