Cauliflower rice with parsley

Ingredients

  • cauliflower florets
  • olive oil
  • parsley
  • pepper & salt

Preparation

Heat oil or butter in a pan and fry the cauliflower florets until done (+/- 5 min). Put the florets in a blender and grind into grains (not too long, or they will be ground too finely). Add some salt and pepper to the cauliflower rice and finish with some parsley. For freshness add cucumber slices and/or black olives.
