Cherry brownie
Ingredients
- 400g butter
- 400g pitted cherries
- 700g fine sugar
- 100g cocoa powder
- 10 eggs
- 250g flour
- 12g baking powder
- 500g dark chocolate
- 200g dark chocolate for the garnish
- 200g finely chopped nuts (e.g. walnuts)
- 1/2 teaspoon of salt

Preparation
Melt the chocolate in a bain-marie along with the butter on low heat. When the mass has become homogeneous, remove from heat and then add the cherries and nuts. Mix the flour, baking powder, sugar, salt and cocoa powder in a separate bowl. Subsequently add this mixture to the melted chocolate and stir until you get a homogeneous mass. Finally: add the beaten eggs to the mixture. Spoon the batter on a buttered baking tray (or baking paper) and spread evenly. Sprinkle chocolate chunks (e.g. chocolate Callets) over the batter. Place in a preheated oven (185°C) and bake during 22 minutes. Leave the brownie to cool and portion. If you wish, you can serve the brownies with a scoop of vanilla ice cream or crème anglaise.
