Penne with ratatouille

Ingredients

  • 5kg ratatouille vegetables
  • 250g shallots
  • 25g 8 herbs mix

  • 2kg vegetarian sausages
  • 1kg mozzarella
  • fresh basil
  • gomashio curry
  • pepper
  • salt
  • parsley
  • olive oil

Preparation

Cook or steam the ratatouille vegetables during 10 minutes until they are al dente. Lower the penne for 1 minute in boiling salted water or steam for 1 minute. Wok the shallots in olive oil. Add the sliced veggie sausages and leave to fry for 5 minutes. Then add the penne and ratatouille and wok briefly. Season with salt and pepper. Serve on a plate and finish with mozzarella fette strips, fresh basil, gomashio curry and flat leaf parsley. Serve with herb bread. For the herb bread: use a stainless steel ring to cut round pieces of bread out of focaccia bread, mix the herbs with olive oil, salt and pepper and coat the pieces of bread with this mixture. Briefly bake in the oven at 180°C (8 minutes).
