Pumkin soup with lemon zest

Ingredients

  • 150g onion rings
  • 1tablespoon of olive oil
  • 600g diced pumpkin
  • the zest of ½ lemon
  • 1 vegetable stock cube
  • water
  • pepper
  • salt
  • 1tablespoon of finely chopped chives
  • soy cream

Preparation

Take a pot and heat the olive oil. Add and fry the onion rings. Wash the lemon and remove the zest with a peeler. Add the zest and let simmer along for a minute. Add the diced pumpkin and vegetable stock cube and add water until everything is just under water. Bring to the boil and let cook for 20 minutes. Mix until the soup is smooth. Add the soy cream and mix again. Serve with some chives and roasted pumpkin seeds.
